Southwestern Shrimp Bowls

This bowl is the best way to have a multi-component meal in a hurry on a weeknight, thanks to – who else? – my dear friend Trader Joe. Farro and black beans make this bowl way more filling than a traditional shrimp bowl and it’s a swap/addition that requires almost no effort. And when you are dealing with fickle toddlers, a meal that is served deconstructed is often the only way to go to keep your sanity.

While some 10 minute farro is cooking on the stove, thaw some jumbo frozen shrimp, pat dry, and cook them up in a pan with some blackened seasoning and oil. They’ll be done in about 3 minutes. Put them to the side and use the same pan to warm up some frozen roasted corn and a can of drained black beans with some butter and chili lime seasoning. When you’re ready to assemble, offer up sour cream, crispy shallots, chipotle mayo, and shredded cheese as toppings.
